Tropical Chill May 22, 2020 by Jane Lindsey Our Curator, Emily Falke, created this dessert recipe for our Surf the Big Wave fundraiser. Stay cool with this summery treat. Tropical Chill Serves 6Ingredients: 2 pints Haagan Daaz Pineapple Coconut Ice Cream 6 pieces dried mango 1/2 cup fresh pineapple chunks, halved 1/4 cup chopped pistachios 1/4 cup chopped macadamia nuts 6 tablespoons pure maple syrup 1 teaspoon ground cinnamon 6 mint leaves Directions: Place 2 scoops of ice cream in 6 bowls. Top each with a piece of mango, and equal portions of pineapple, pistachios, and macadamia nuts. Drizzle each with a tablespoon of maple syrup and pinch of cinnamon. Top with mint leaves.
